Huvudsyftet med projektet oLIVE-CLIMA är att främja införandet av nya odlingsmetoder för trädgrödor som ett kostnadseffektivt sätt att begränsa och anpassa sig till klimatförändringarna. Olivproducerande områden i Grekland kommer att väljas ut för att undersöka deras potential att öka markens koldioxidbindning, minska utsläppen av växthusgaser och testa tre olika socioekonomiska situationer som för närvarande råder på grekiska gårdar: från mer traditionellt jordbruk till innovativt miljövänligt jordbruk.
